My Healthy Breakfast (6-8 servings)

12 eggs
1/2 C lowfat milk
1/2 lb cooked pork sausage (precooked weight), crumbled
2 C fresh spinach
1/2 large onion, diced
5 mushrooms, diced
1 C mixed assorted bell peppers, diced
2 cloves garlic, minced
1 T canola oil
1 slice American cheese
salt & pepper to taste

Whisk eggs & milk until combined.  Set aside.  In large, non stick skillet, heat oil.  Add sausage, onion, mushrooms, garlic and peppers.  Sautee 3-4 minutes.  Add egg mixture, sprinkle spinach over eggs.  Continue cooking & stirring until eggs are done and spinach is slightly wilted.  Tear cheese into small pieces, add & stir. 

This mix is great served in a whole wheat tortilla or in a whole wheat pita!  I make a batch on Sunday & have breakfasts for the whole week (1/2 a pita, filled, with a piece of fruit)
